PB and Chocolate

So, I have one more session of holiday baking planned, and I need a good peanut butter treat recipe that is NOT peanut butter balls or buckeyes or whatever you call them. It also needs to be suitable for boxing up and freezing. And, you know, I will be the one making them, so it needs to be kind of idiot proof and not involve steps like sifting flour, mkay?

Anyone have any tried and true favorites combining the concepts of PEANUT BUTTER, chocolate, and EASY?

YES. Peanut butter blossoms are delish, but not sure how they'd freeze, what with the hershey kisses and all...but my absolute favorite is hidden milky way cookies. Essentially, you take peanut butter cookie dough, wrap it around half of a mini milky way, and bake. You end up with a super soft peanut butter cookie with a gooey chocolate center.

I'd be happy to forward the recipe. Now I'm craving them!

If nothing else, I think you probably could freeze the dough in balls -- that's how you bake them -- and then just cook an extra minute or two.

My favorite is to use your regular old chocolate chip cooke recipe (for me that's just the one on the bag) but add 1 cup of smooth peanut butter. It's not fancy but they're really good!

I like to put peanut butter in the middle of either Saltine crackers or Ritz crackers and then dip them in either white or milk chocolate (almond bark). It's a *bit* time consuming, but it's super easy, and SUPER delish!

Would you believe (long time lurker, de-lurking to share!) I just printed something good out last night.

Use refrigerator peanut butter cookie dough, cut the dough into 12 equal pieces, take a hunk of dough and wrap it around a mini reeses peanut butter cup, it'll look like a little ball. Place the ball on the cookie sheet and bake at 350 for 8-10 min. Melt some semi-sweet chocolate & shortening to drizzle over them when cooled. She calls them zebra cookies and they look good.

Though probably not helpful if you're looking to use up actual peanut butter. But super easy if you are going out to buy ingredients. And they sound SO good. You can find them on her blog, Bunny's Warm Oven. Yummmmmm.

Chex. Muddy Buddies, Puppy Chow, whatever you want to call it. The recipe is usually on the box, but basically you melt a bunch of chocolate chips and peanut butter, shake it with chex in a ziploc bag, and cover it in powdered sugar. Makes YUMMY snack mix.

This is a family favorite.
Bon-bons
1 cup of graham cracker crumbs
18 oz. jar of crunchy pb
1/2 cup powder sugar
1 1/2 cups rice krispies

Mix it all together. Put it in fridge for a least an hour. Separate into bite-size balls, freeze 20 minutes. Dip balls in melted chocolate. Set on wax paper to let chocolate harden.

Makes about 50. Freezes great. My mom always makes a ton of these at the beginning of the holiday season and then thaws them out as she has parties.

Ditto Kelli on the Puppy Chow...easy, freezes & travels well. Melt a bag of chocolate chips and 2 cups of peanut butter. Mix in a box of Golden Grahams, 2 cups of peanuts & 2 cups of raisins. Pour into a paper grocery bag with 2 cups of powdered sugar and shake til coated. Spread onto wax paper, break apart big chunks & cool. Delicious.

Well, everything I was going to suggest has been suggested. The PB cookies Erica blogged about are like the ones I make, except I use PB cups in mine and put a chocolate PB icing on top. E-mail me if you'd like my recipe. You know, I think I took some to you when you were pregnant with Eli.

OH! Family Favorite:

Peanut Butter Cups

½ lb graham cracker crumbs
½ lb margarine
1 ½ cup peanut butter (creamy or crunchy)
1 lb powdered sugar
2 cups chocolate chips

Combine crumbs, margarine, peanut butter, & sugar. Work together until smooth. Press this mixture in a 9 x 13 pan. Melt choc. chips over heat in pan. Pour over peanut butter mixture. Cool in fridge until firm. Cut.


--My mom used to freeze these. I would cut them and then freeze them. (And when you cut them, you may have to warm up your knife with hot water--the chocolate does firm up QUITE firm!)
